Have you ever wondered how South of France celebrates its Christmas? Look no further as Chef Maxime from the famed Monique Patisserie educates us on the tradition of the 13 desserts (les treize desserts de Noël) - a cherished Christmas custom from Provence, in the South of France, symbolizing Jesus Christ and his 12 apostles at the Last Supper.

While this tradition may seem about luxury or excess, it's rather a way to celebrate abundance, family, and sharing. After the grand Christmas Eve meal or Le Gros Souper, the 13 desserts are laid out together on the table and left there for three days, so that everyone can nibble on them during the holidays.

The idea is to include a variety of sweet flavors, textures, and local produce — from nuts to fruit and pastries — representing the richness of the region of Provence and the balance between poverty and generosity.

In a bid to explore traditions around the world, Bruijn reached out to Chef Maxime to craft quintessential marzipan in true French flair. Like us, Monique celebrates heirloom recipes that define the care and taste synonymous to it. Pairing succulent, Indian dates with delicious marzipans flavours intrinsic to South of France has resulted in an iconic product that brings together two cultures.
