The last month of the Hindu calendar is Phalgun, resetting the times for Chait or Chaitra as first. The onset of month ask for Thandai : A unique mix of spices and soaked fruit to help nourish and cool down the body. Thandai also happens to be a Holi staple. 


Here is a recipe that uses dates as sweetener with no added dairy. 

Serves 6
2 tbsp white melon seeds   
2 tbsp poppy 
seeds
1 tsp black pepper 
1/2 cup almonds
1/2 cup cashews
5 - 7 soaked dates

Soak all the ingredients for 2 hours in warm water or till the water completely cools down. Peel the skin off the almonds.

Blend to create a paste-like consistency and your thandai mix is ready. Pour and blend again with 5 glasses of water and plenty of ice.  Serve with rose petals.

Consume immediately.
