Ranginak - A taste of childhood

Ranginak is our latest offering, celebrating festive flavours and the blending of two cultures - Persian and Indian.

Ranginak combines elements quintessential to both cultures to form a delectable sweetmeat made using dates and chickpea flour. Typically in Iran, the dates hail from Shiraz in the southern region where date palms grow. The dates stuffed with walnuts are then layered with a coating of chickpea flour which in India, is the main ingredient for the classic 𝘣𝘦𝘴𝘢𝘯 𝘬𝘪 𝘣𝘢𝘳𝘧𝘪. This is flavoured further with spices like saffron, cardamom etc that are shared between the two cultures, resulting in a truly delicious delight.

Why have we introduced this delicacy?
“At my workspace, I enjoy indulging in the process—from sourcing ingredients to the delicious emergence of delicacies. My memory of Ranginak originated from my childhood days in the Gulf; I visited many Iranian bazaars from which delicious smells wafted. I vividly remember a sweet delicacy called Sohan, which is similar to the Indian Patissa (essentially the same but differed regionally). This made me realise how food is borderless and inspired me to recreate my own childhood memories with Ranginak—a sweetmeat close to Iran yet identical to the besan ki barfi in India.” - Mandavi Kanchan, Founder and Creative Head at Bruijn as she recounts her reason to introduce this meaningful offering as part of our menu.
